Cassia cinnamon (Cinnamomum cassia) is the bold, spicy, warming cinnamon most people grew up with — and one of the most recognizable kitchen spices in the world. Human-grade, organically sourced, one pure ingredient, no blends.
Why whole-nugget form? We keep our Apothecary Cassia cinnamon as small bark nuggets (rather than powder) for a specific reason: when you infuse them in a water bucket, the nugget absorbs moisture first and then gradually releases its aromatic compounds back out — giving you a cleaner, stronger, more sustained water infusion than powder alone. It’s the Apothecary approach in action. (Note: our Flavors line uses Ceylon cinnamon powder instead, because powder integrates better into pre-blended fruit-and-herb formulations.)
Ceylon vs. Cassia — what’s the difference?
Both are real cinnamon — but they come from different species with different compound profiles. Cassia (Cinnamomum cassia, this product) is the bolder, spicier, more aromatic one — what most people think of when they say “cinnamon.” Ceylon (Cinnamomum verum) is the milder, citrusy “true cinnamon.” We offer both, species-matched: Cassia for horses (where the bold profile shines in water infusions), Ceylon for dogs (where smaller body weight makes Ceylon the better daily choice).
